The History of the Sin of Gin

During the late 1800’s, whilst accompanying her husband to India, a daring wife of a captain in the Indian Army decided to use local spices to enhance the flavour of her gin and tonics. Thus began the life of our signature gin, Colonial Spiced.  After retiring to her native Northern Ireland she struck up a friendship with my father, an assistant minister of her church.

At Christmas my father would often return home with a small bottle of spiced gin, gifted to him by … His enthusiasm was such that the recipe was given to him on her passing, placed in a thank you card written before her death.

Growing up as a child I often helped my parents make this gin, particularly prior to Christmas although it had become their favourite tipple all year round. Eventually I continued on my own, sharing the produce with family and friends but keeping the recipe close to my heart.

As its popularity grew amongst those around me I began to produce larger batches, ensuring that the quality and taste were never sacrificed.New flavour combinations came to mind which eventually, after much trial and error, lead to three more intriguing infused gins.

Prepared, bottled and finished by my own hand. All ingredients used have been meticulously selected to produce the best balance in flavour possible.

Become a Cocktail Magician

Colonial Sparkle

Glass – Champagne flute
125ml bubbly
12.5ml Colonial Spiced

Add your choice of favourite champagne or prosecco to the glass and top with Colonial Spiced Gin. Garnish with a fresh cherry.

Damzel in DeZest

Glass – Martini
50ml Citrus Zest Gin
25ml St Germain Elderflower Liquor
cucumber topped with Elderflower Presse

Place some cucumber into a cocktail shaker and muddle. Add plenty of ice. Now add the gin and elderflower liquor and shake vigorously. Strain into a chilled martini glass and top up with elderflower presse. Garnish with a slice of cucumber.

Knight in Chilli Armour

Glass – Martini
50ml Cranberry & Chilli Gin
25ml dry Vermouth
12.5 ml Peach Schnapps
12.5ml lemon juice

Add all ingredients to cocktail shaker filled with ice. Shake and strain into Martini glass. Garnish with cranberries.
